Janet's Flaxseed Pancakes

(Gluten-free, dairy-free, sugar-free, high fibre, whole grain.) These pancakes are not only nutritious and wholesome, but are delicious and great when served in bed for mom on her special.

1 cup Brn. Rice Flour 1/2 cup ground Flaxseed
1/2 tsp. Cinnamon 1 1/2 cups Eden Rice & Soy Milk
Optional: Blueberries 1/2 cup Quinoa Flakes
1/4 tsp. Celtic Sea Salt 1 tsp. Pure Vanilla Extract
2 eggs (optional)

  • To replace eggs: add 2 Tbsp. extra ground flax and 1 Tbsp. of soy milk.
  • Mix together dry ingredients and wet ingredients separately, then combine. Drop onto hot griddle. Serive with pure maple syrup and homemade organic fruit salad.
